Rub
- 1 tb allspice
- 1 tb brown sugar
- 1tb onion powder
- 1 ½ teaspoon of kosher salt
- ½ tsp nutmeg
- ½ tsp cinnamon
- ½ tsp dry thyme
- 2x12 ounce loins
Let sit overnight
Mop every 30min
- Add the rest of the rub
- 1 ½ chicken stock
- 2 tb vegetable
oil
- 1tb cider vinegar
- 1 tb honey
Sear then smoke around 275F
Cook to an Internal temp 160F
